Pailleté feuilletine are broken up pieces of dried French caramelised crêpes dentelles (lacy crêpes). They are more like a tuile or crunchy wafer. These incredibly thin layers of sweetness are a common ingredient in French pastry. It is the perfect companion if you want to play with contrasts in taste and texture. Its delicious taste is highly compatible with chocolate. At the same time, its crunchiness will give your pralines, pastries and desserts, even more depth and refinement. Use it to give the smooth centre a crispy bite. Pailleté Feuilletine will remain crunchy.
You can sprinkle it on top of mousses, ice creams and desserts that are served à la minute as well. Our chefs recommend not to mix it into cream, dairy or liquid bases, since Pailleté Feuilletine tends to absorb the moisture, and will turn soft and soggy.
