Actiwhite Meringue Powder 100g - Bakels


Actiwhite is made from fresh egg albumen (egg whites) which have been specially treated so that moisture attracting proteins have been denatured, eliminating the risk of salmonella.  Actiwhite has superior stability to fresh egg white which makes it ideal for use in meringues and royal icing. 

Also known as Meringue Powder. 

Making Royal Icing Using Actiwhite:

20g of Actiwhite,
Cold water 100ml
Icing sugar 600g,
1 tsp vinegar

1. Soak ACTIWHITE in the water for 20 minutes.
2. Add Icing sugar and vinegar to soaked actiwhite mixture
3. Using an electric hand mixer, beat for 2−3 minutes on fast speed to the consistency required.
Notes: The addition of acetic acid (vinegar) complexes with the protein of the egg white thereby improving the overall quality of the Royal Icing.
