Carefully selected soft, low protein grains are finely milled to create a delicate flour designed for fine, light textured cakes.
The specialty Cake flour with its lowest protein content (8%), has undergone a special bleaching process (distinct from the process used for other white flours) that increases its ability to hold large amounts of water and sugar (a higher ratio of sugar and liquid compared to plain flour). This means the flour will be better able to hold its rise and less liable to collapse. It provides the cake with a very soft crumb and a light, moist, fine texture. Cakes made with cake flour are also sweeter, have greater volume and a longer shelf life than cakes made with standard flour.

What is the difference between Cake Flour and Plain Flour (All Purpose Flour):-
Cake flour is a finely milled, delicate flour with a low protein content; it’s usually bleached. When used in cakes, it results in a super-tender texture with a fine crumb, and a good rise. Chiffon and Angel Food Cake are two great examples of where cake flour really shines.
The primary difference between cake flour and all-purpose (plain) flour is the protein content (which becomes gluten). The protein content of cake flour is about 6-7%, while the protein content of plain flour is slightly higher (around 9-12%)
